I feel like it’s easy to get into a “rut” when it comes to finding new meal/snacks for baby. We’ve found the best way to counter that is by meal prepping ahead of time. These recipes below are simple, healthy, quick to prepare, and very tasty snacks for baby. Give them a try and let me know what you think!
4 INGREDIENT CHIA PUDDING
Ingredients:
- 1 ripe banana
- 2 cups coconut milk
- 2 tbsp chia seeds
- 1 cup fresh or frozen raspberries (can substitute strawberries or blueberries too!)
Directions:
- Blend banana and coconut milk for 15 seconds
- Add chia seeds and blend for 5 seconds
- Divide into storage containers (we love the Wee Sprouts containers!)
- Cover and place in refrigerator for a few hours or overnight
- Serve within three days or freeze for up to 3 months
HEALTHY PANCAKES
Ingredients:
- 1 medium banana
- 1 egg
- handful of spinach
- 2 tbsp of oat flour
- 1/2 tbsp ground flax
- 1/8 tsp cinnamon
Directions:
- Put banana in mixing bowl and mash with a fork
- Add the rest of the ingredients and mix until smooth
- Heat up skillet with avocado oil
- Cook each for 3 mins or until brown
- Serve immediately (make sure they are cool enough for baby) or refrigerate and eat within 3 days
SOFT PEANUT BUTTER COCONUT COOKIES
Ingredients:
- 1 egg
- 1 medium banana
- 1/2 cup peanut butter
- 1/3 cup unsweetened coconut
- 3 tablespoons coconut flour
- 1/2 teaspoon pure vanilla extract
- 1/2 cup chocolate chips (optional)
Directions
- Preheat oven to 350°F
- In a medium bowl, mash banana, whisk in egg, add peanut butter and vanilla, and mix until smooth
- Add in coconut and flour, and stir
- Cover and chill cookie dough for 10 minutes in the refrigerator
- Place cookie dough on baking sheet covered in parchment paper, use 2 tbsp scoops for the dough
- bake for 10-11 minutes or until golden brown
- Cool and serve, or store in an airtight container and serve within 3-5 days. Can be frozen for 3 months.
FROZEN BANANA BITES
We haven’t tried this one yet, but it sounds like a perfect hot weather snack so I included it anyways!
Ingredients
- 1 banana
- 2 tbsp peanut butter
- whole fat greek yogurt
- 1 tbsp chia seeds
Directions
- Slice the bananas, place them on a sheet of wax paper, and smush flat with the bottom of a cup or jar
- drizzle peanut butter and yogurt on top, then sprinkle on the chia seeds
- place in the freezer until frozen, then serve!
- These can last for months in the freezer, but my bet is they will go faster than that!
